Japanese Gyuto (Chef's Knife): a Western shaped all purpose chef's knife for meat, fish and vegetables. Blade: VG10 steel (hammered tsuchime finish, Teflon coated); stainless, resistant to rust; hardness HRC 60-62; double bevel (for right and left handed users). Sakai has about 600 years of blade forging history, and Sakai Takayuki is one of its best known knife makers: the knives are finished by hand using traditional techniques and exported to more than 100 countries.

How to use and care
• Do not cut or chop frozen food or bones: this chips the blade. • Wash by hand with warm water and dry thoroughly with a towel right away. • Do not put it in a dishwasher. • The black Teflon coating can wear off with strong rubbing from a sponge or brush, and it comes off where the blade is sharpened.

Orders ship from Japan by EMS (Japan Post). Delivery time depends on your destination country. You'll get a tracking number as soon as your order ships, so you can follow it the whole way.
