Japanese Bunka: an all purpose Japanese knife with a pointed angled tip for meat, fish and vegetables. Blade: Shirogami #1 (White Paper) steel (hammered tsuchime finish); carbon steel: very sharp but rusts without proper care; hardness HRC 60-61; double bevel (for right and left handed users). Seisuke is the own brand of the Seisuke Hamono knife shop: the knives are handmade in small batches by skilled craftsmen from different regions of Japan.

How to use and care
• Do not cut or chop frozen food or bones: this chips the blade. • Wash by hand with warm water and dry thoroughly with a towel right away. • Do not put it in a dishwasher. • The carbon steel rusts easily: never leave the knife wet and store it dry.

How long does shipping take?
Orders ship from Japan by EMS (Japan Post). Delivery time depends on your destination country. You'll get a tracking number as soon as your order ships, so you can follow it the whole way.
